Enzymatic Removal of Free Fatty Acids in Oils Using Lipase

Abstract

|
For the enzymatic deacidification of oil, an immobilized lipase (Lipozyme IM-20) bioreactor was designed using a continuous water removing apparatus under the high vacuum. Enzymatic deacidification conditions were partially optimized for rapid and efficient removal of free fatty acids in soybean oil as follows: vacuum, 1 §®Hg; glycerol concentration, 2.5£¥; lipase concentration, 5£¥; temperature, 70¡É; reaction time, 6 hrs. Eighty five percent of free fatty acids present in soybean oil was remove from the oil within 6 hrs of reaction after free fatty acids were converted into glycerides through enzymatic esterification.
